Ingredients:

  • 1 Tbs Olive Oil
  • 1 Medium Onion, Diced
  • 2 Cloves Garlic, Minced
  • 1 Tbs Harissa Paste
  • 2 Tbs Tomato Paste
  • 1 tsp Cumin Powder
  • 1 Tin Crushed Tomatoes (400g)
  • 1 Tin Chickpeas (400g)
  • 4 Eggs
  • 1 Round Feta
  • 20g Fresh Coriander
  • 2 Pita Breads (1/2 Per Serving)

Instrustions:

  1. Heat the olive oil in a large frying pan over medium heat. Add the diced onion. Cook for 5-7 minutes until softened.
  2. Stir in the minced garlic, harissa paste, tomato paste, and cumin. Cook for 1-2 minutes until fragrant.
  3. Pour in the crushed tomatoes and add the chickpeas. Stir well and simmer for 8–10 minutes until slightly thickened.
  4. Make four small wells in the sauce and crack an egg into each. Cover and cook on low until the eggs are set to your liking.
  5. Crumble the feta over the shakshuka and sprinkle with fresh coriander. Serve hot with pita bread.
