Ingredients:
- 1 Tbs Olive Oil
- 1 Medium Onion, Diced
- 2 Cloves Garlic, Minced
- 1 Tbs Harissa Paste
- 2 Tbs Tomato Paste
- 1 tsp Cumin Powder
- 1 Tin Crushed Tomatoes (400g)
- 1 Tin Chickpeas (400g)
- 4 Eggs
- 1 Round Feta
- 20g Fresh Coriander
- 2 Pita Breads (1/2 Per Serving)
Instrustions:
- Heat the olive oil in a large frying pan over medium heat. Add the diced onion. Cook for 5-7 minutes until softened.
- Stir in the minced garlic, harissa paste, tomato paste, and cumin. Cook for 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and add the chickpeas. Stir well and simmer for 8–10 minutes until slightly thickened.
- Make four small wells in the sauce and crack an egg into each. Cover and cook on low until the eggs are set to your liking.
- Crumble the feta over the shakshuka and sprinkle with fresh coriander. Serve hot with pita bread.
