Ingredients

  • 1 Onion, Diced
  • 1 Clove Garlic, Crushed
  • 1 Green Pepper, Diced
  • 2 Carrots, Grated
  • 300g Baby Marrow, Grated
  • 250g Extra Lean Mince
  • Spices: 1 tsp each turmeric, cinnamon, coriander, salt & pepper,
  • 1 Tin Brown Lentils (300g)
  • 2 Tbsp Vinegar
  • 4 Tbsp Chutney
  • 125ml Low Fat Milk
  • 2 Eggs
  • 2 Tbsp Curry Powder
  • 4 Bay Leaves

Instructions:

  1. Preheat the oven to 180°C.
  2. Brown the onions, garlic, green pepper, carrot and baby marrow in a pan.
  3. Transfer to a bowl. Reuse the pan to lightly brown the mince and lentils with all the spices.
  4. Add in lentils and remove from the heat.
  5. Mix the vegetables, vinegar and chutney to the lentil & mince mix.
  6. Spoon the mixture evenly into a greased ovenproof dish. Stick the bay leaves into the mixture.
  7. Whisk together the milk,  egg and a pinch of salt and pour over the dish.
  8. Bake for 45-60 minutes. Serve with brown rice.
