Ingredients
- 1 Onion, Diced
- 1 Clove Garlic, Crushed
- 1 Green Pepper, Diced
- 2 Carrots, Grated
- 300g Baby Marrow, Grated
- 250g Extra Lean Mince
- Spices: 1 tsp each turmeric, cinnamon, coriander, salt & pepper,
- 1 Tin Brown Lentils (300g)
- 2 Tbsp Vinegar
- 4 Tbsp Chutney
- 125ml Low Fat Milk
- 2 Eggs
- 2 Tbsp Curry Powder
- 4 Bay Leaves
Instructions:
- Preheat the oven to 180°C.
- Brown the onions, garlic, green pepper, carrot and baby marrow in a pan.
- Transfer to a bowl. Reuse the pan to lightly brown the mince and lentils with all the spices.
- Add in lentils and remove from the heat.
- Mix the vegetables, vinegar and chutney to the lentil & mince mix.
- Spoon the mixture evenly into a greased ovenproof dish. Stick the bay leaves into the mixture.
- Whisk together the milk, egg and a pinch of salt and pour over the dish.
- Bake for 45-60 minutes. Serve with brown rice.
