Ingredients:
- 1 Onion, Diced
- 1 Clove Garlic, Minced
- 1 Carrot, Grated
- 1 Tbsp Olive Oil
- 1 Tin Crushed Tomato
- 15g Tomato Paste
- 1 Tin Cannelloni Beans
- 2 Cups Spinach, Chopped
- 20g Fresh Parsley
- A pinch each of Salt & Pepper
Instructions:
- In a pan, lightly fry the onion, garlic and carrots.
- Once soft, add the tomato paste, crushed tomato, and beans.
- Allow to reduce, then stir in the spinach, fresh basil, salt and pepper.
- Serve over your favourite high-fibre toast.
