Ingredients:

  • 1 Onion, Diced
  • 1 Clove Garlic, Minced
  • 1 Carrot, Grated
  • 1 Tbsp Olive Oil
  • 1 Tin Crushed Tomato
  • 15g Tomato Paste
  • 1 Tin Cannelloni Beans
  • 2 Cups Spinach, Chopped
  • 20g Fresh Parsley
  • A pinch each of Salt & Pepper

 

Instructions:

  1. In a pan, lightly fry the onion, garlic and carrots.
  2. Once soft, add the tomato paste, crushed tomato, and beans.
  3. Allow to reduce, then stir in the spinach, fresh basil, salt and pepper.
  4. Serve over your favourite high-fibre toast.
